First, don't say "Saudi Hajj", because the family of Ibn Saud is the one who rebel against Islam Caliphate and support Zionism.

"Why if we are to travel to Saudi and, we had the Quran but were 500 years back with the Quran only no hadith or anyone telling us what to do or how to interpret. How would that person understand hajj. I believe this understanding revealed by God is the true Hajj we should be after."

"no hadith or anyone telling us what to do...", from whom do you think Bukhari or Muslim collect their Hadith? Do you think you cannot trust companions of the Prophets who live 500 years before the Hadith collected? Who do you trust, your interpretation, or the Prophet's and his companions'?

Al Baqarah/The Calf (2)
125. Remember We made al-Bait (the House) a place of assembly for men and a place of safety; and take ye the station of Ibrahim as a place of prayer; and We covenanted with Abraham and Isma'il, that they should sanctify My House for those who compass it round (thawaf), or use it as a retreat (i'tikaf), or bow (ruku'), or prostrate (sujud) themselves (therein in prayer).
126. And remember Ibrahim said: "My Lord, make this a City of Peace, and feed its people with fruits,-such of them as believe in Allah and the Last Day." He said: "(Yea), and such as reject Faith,-for a while will I grant them their pleasure, but will soon drive them to the torment of Fire,- an evil destination (indeed)!"
127. And remember Ibrahim and Isma'il raised the foundations of al-Bait (the House) (With this prayer): "Our Lord! Accept (this service) from us: For Thou art the All-Hearing, the All-knowing.
128. "Our Lord! make of us Muslims, bowing to Thy (Will), and of our progeny a people Muslim, bowing to Thy (will); and show us our place for the celebration of (due) rites; and turn unto us (in Mercy); for Thou art the Oft-Returning, Most Merciful.

144. We see the turning of thy face (for guidance to the heavens: now Shall We turn thee to a Qibla that shall please thee. Turn then Thy face in the direction of the Masjid al-Haram (Sacred Mosque): Wherever ye are, turn your faces in that direction. The people of the Book know well that that is the truth from their Lord. Nor is Allah unmindful of what they do.

158. Behold! Safa and Marwa are among the Symbols of Allah. So if those who visit the House in the Season or at other times, should compass them round, it is no sin in them. And if any one obeyeth his own impulse to good,- be sure that Allah is He Who recogniseth and knoweth.

196. And complete the Hajj or 'umra in the service of Allah. But if ye are prevented (From completing it), send an offering for sacrifice, such as ye may find, and do not shave your heads until the offering reaches the place of sacrifice. And if any of you is ill, or has an ailment in his scalp, (Necessitating shaving), (He should) in compensation either fast, or feed the poor, or offer sacrifice; and when ye are in peaceful conditions (again), if any one wishes to continue the 'umra on to the hajj, He must make an offering, such as he can afford, but if he cannot afford it, He should fast three days during the hajj and seven days on his return, Making ten days in all. This is for those whose household is not in (the precincts of) al-Masjid al-Haram (the Sacred Mosque). And fear Allah, and know that Allah Is strict in punishment.
197. For Hajj are the months well known. If any one undertakes that duty therein, Let there be no obscenity, nor wickedness, nor wrangling in the Hajj. And whatever good ye do, (be sure) Allah knoweth it. And take a provision (With you) for the journey, but the best of provisions is right conduct. So fear Me, o ye that are wise.

Ali Imran/The Family of Imran (3)
97. In it are Signs Manifest; (for example), Maqam (the Station) of Ibrahim; whoever enters it attains security; Hajj al-Bait (Pilgrimage) thereto is a duty men owe to Allah,- those who can afford the journey; but if any deny faith, Allah stands not in need of any of His creatures.

Al Ma'ida/The Table (5)
1. O ye who believe! fulfil (all) obligations. Lawful unto you (for food) are all four-footed animals, with the exceptions named: But animals of the chase are forbidden while ye are in the sacred precincts or in pilgrim garb: for Allah doth command according to His will and plan.
2. O ye who believe! Violate not the sanctity of the symbols of Allah, nor of the sacred month, nor of al-Hadya (the animals brought for sacrifice), nor al-Qala'id (the garlands that mark out such animals), nor the people resorting to al-Bait al Haram (the sacred house), seeking of the bounty and good pleasure of their Lord. But when ye are clear of the sacred precincts and of pilgrim garb, ye may hunt and let not the hatred of some people in (once) shutting you out of al-Masjid al-Haram (the Sacred Mosque) lead you to transgression (and hostility on your part). Help ye one another in righteousness and piety, but help ye not one another in sin and rancour: fear Allah: for Allah is strict in punishment.

And read Surah al-Hajj if you want thorough explanation. Clearly, Hajj to al-Bait al-Haram, al-Masjid al-Haram, that Muslims Ummah practiced today, is an obligatory explained in Al Qur'an.
References :
Al Qur'an, who tell us how to do Hajj no different then how Ummah do today.
And for Muslims, Al Qur'an is not deniable.

Hajj was NOT compulsory before the Quran was revealed. Various rules came, and were changed by Allah as it was needed. Hajj only came "compulsory" during Prophet Muhammad (pbuh) era 1432 yrs ago. There were few things that were taken from the Prophet Abraham (pbuh) era which Allah liked.
References :
Excellent masterpiece from a Quranist..
Actually, you question proves that the whole idea of Quanist is false.
2:199 and surge onward together with the multitude of all the other people who surge onward, [184] and ask God to forgive you your sins: for, verily, God is much-forgiving, a dispenser of grace.

The above verse proves that there was some specific method and place of making and Hajj and we have to follow that. Does not it mean that Quran is ordering us to learn from from people (Sunnah) which is other than Quran?
